Fresh from earning a spot in Tatler’s Best 20 Restaurants in Indonesia, SKOOL Kitchen is known for its laidback energy, quality food, and bar culture. Bringing its signature spirit to SKAI, the acclaimed bartender will serve up a cocktail experience that’s simple, flavourful, and cool.
For this special collaboration, Deva showcases his innovative use of the shrub technique, a traditional method of balancing fruit, sugar, and vinegar to create layered, refreshing cocktails with depth and character. One ingredient taking centre stage is mengkudu (noni), an Indonesian native fruit that’s often overlooked for its naturally bitter and astringent taste. By turning this bold ingredient into something fresh and approachable, Deva offers guests a new way to experience a familiar local fruit.
One of the must-try cocktails of the night is Tomat, Deva’s lighter, more playful twist on the classic Bloody Mary. Keeping the rich tomato flavour while cutting back around 80% of its colour and heaviness, it’s designed to be easier, fresher, and more fun to drink.
The cocktail lineup is made to pair effortlessly with SKAI favourites like Smoked Beef Patty, Wood-Fired Chicken, and Grilled Halloumi, bringing together easy drinks, great food, and relaxed beachfront dining.
