From the team behind Mason and Shelter, Bar Souvenir is Pererenan’s moody, vinyl-spinning wine bar turned pairing destination. It’s not a formal tasting menu – you build your own journey with sommeliers who actually drink natural wine. The list is 80% low-intervention – Jura, Loire, Adelaide Hills – with a few brave Indonesian natural experiments. Food is designed for wine: gilda skewers, beef tartare with cured yolk, anchovy toast, and Comté toasties. Ask for a pairing and they’ll do a 3-4 glass flight around your dishes. Raw wagyu with fermented chilli? They’ll pull a chilled Pinot Noir. Grilled octmodel? Skin-contact Chenin. Bar Vera

Tiny, buzzy, and always full, Bar Vera is Canggu’s cult natural wine bar that actually knows how to pair. Standing-room-only at sunset, Vera’s philosophy is “what the market found today.” There’s no set pairing menu, but if you say “pair it for me,” the team will build you a 3-4 glass journey that’s spot-on. Expect chilled reds, pet-nats, and skin-contact whites served ice-cold to beat the heat, matched with hyper-seasonal small plates – fresh oysters with Muscadet, pork jowl with Austrian Blaufränkisch, or tomato toast with a funky Sicilian rosé. Cocktails are low-ABV and wine-based: sherry cobblers, vermouth spritzes, and the famous Vera Spritz with local citrus and arak. The food is salty, shareable, and designed to make you order another glass. It feels like a Lisbon wine bar dropped into Canggu. Boy’N’Cow

El Kabron could coast on its cliffside sunset view alone, but its Spanish pairing program makes it worth staying for dinner. This Pecatu institution has leaned fully into Iberian drinks: Albarino, Garnacha Rosé, Priorat, and Cava by the glass, plus sherry-based cocktails. Their signature pairing is the Sunset Ritual – pick three tapas and they match each with a wine or cocktail. Galician Albarino with scallop ceviche, chilled Garnacha with jamón croquetas, and a Priorat with lamb chops. Rumari

Shelter started as a wine shop and became Pererenan’s go-to for wood-fired pairing. The vibe is warehouse-cool, the list is 100% natural, and the food is all about fire. The kitchen does wood-fired octmodel with nduja, lamb with fermented chilli, and raw beef with anchovy – all designed to make low-intervention wine shine. Their team will pair a chilled Loire Cabernet Franc with lamb, or a textural skin-contact Malvasia with pork. They also do a clever “Wine Cocktail” flight, using leftover wines to create spritzes and vermouths – zero waste and delicious. No tasting menu, just great advice and a list that changes weekly. Syrco BASÈ

Syrco BASÈ is a culinary destination in Ubud built around food, people, place and curiosity.
