di Mare at Karma Kandara – A Taste of the Italian Riviera Above the Cliffs of Uluwatu

Poised on the limestone cliffs of Uluwatu, with sweeping views of the Indian Ocean, di Mare at Karma Kandara is one of Bali’s most celebrated dining destinations. As part of the resort’s curated #ExperienceKarma journey, di Mare is not simply a place to dine. It is where refined technique, meaningful culinary heritage, and personalised hospitality come together in a setting of natural beauty and quiet sophistication.

With only 50 seats, di Mare offers an intimate setting that feels calm, refined, and quietly luxurious. A recent refresh has introduced an al fresco Amalfi Coast vibe, featuring natural wood tables and chairs, blue and white seat cushions, aquatic tiles, and flowing linen chandeliers. The new look feels breezy yet elevated, a perfect match to Bali’s most stunning Indian Ocean seascape, where breathtaking sunsets complete the scene. Every detail feels considered, but never forced. With the launch of its new Signature Menu, di Mare turns the page to a fresh chapter, one that stays true to its roots while bringing in new ideas, deeper flavours, and a renewed sense of purpose.

The kitchen at di Mare is led by Chef Stefan Thietz, whose culinary roots trace back to the coast of Cape Town. Raised on fresh seafood and open-flame cooking, his approach is grounded in balance, simplicity, and respect for ingredients. After honing his skills in the Cape Winelands and working in celebrated kitchens across South Africa and Southeast Asia, Chef Stefan now serves as Resort Chef de Cuisine at Karma Kandara.

Together with Group Executive Chef Joseph Antonishek, Chef Stefan has shaped a Signature Menu that honours Italian culinary tradition while celebrating familiar favourites. Guests can expect wood-fired pizzas, house-made pastas, and creamy risottos, all prepared with clarity, care, and a deep respect for flavour.

The Chef’s Weekly Inspirations showcase unique and often rarely seen recipes gathered from Chef Joseph’s travels throughout Italy. These include ancient Roman-style seabass finished with garum and lovage, a rustic peasant-style Bolognese, and Campanian comfort dishes like crispy chicken thighs with olives and grapes served over soft polenta. For something more personal, the chefs also offer bespoke tasting menus, created in direct collaboration with guests and tailored to individual preferences and dietary needs.

Desserts at di Mare offer a playful take on Italian classics. Highlights include the signature A Brillo, a spirited twist on the affogato where a pour of espresso martini meets creamy gelato, as well as a bright limoncello cheesecake. A recent favourite is the hazelnut mascarpone semifreddo, paired with honeyed grapes and delicate pasta fritta. It’s the kind of sweet finish that leaves a lasting impression.

Beyond its à la carte offerings, di Mare adds rhythm and colour to the week with a calendar of signature dining events. Mondays are dedicated to Paella & Sangria, a lively Spanish-inspired evening by the pool featuring live cooking stations, tapas, bottomless sangria, and Flamenco performances under the stars. On Wednesdays, the Rayunan Royal Dinner brings a sense of ceremony with a multi-course Indonesian feast inspired by the archipelago’s royal culinary heritage, paired with traditional Balinese dance and dramatic ocean views. Thursdays shift the mood with Giro Beatzza, an all-you-can-eat pizza celebration served giro-style, where the oven stays hot, the music flows with DJ Manu-L at the deck, and the night ends with the indulgent house favourite, the Pizzookie.

Open daily from 7 AM to 11 PM, di Mare moves gracefully from sunrise breakfasts to candlelit dinners. Whether guests arrive for an intimate meal, a lively themed event, or a curated tasting experience, they are met with warm, attentive service and a level of culinary craftsmanship that reflects the spirit of Karma Kandara itself.
