This June, Padma Resort Legian invites culinary enthusiasts to experience two extraordinary evenings celebrating the richness of Indonesian cuisine through a collaboration with one of the country’s most respected culinary figures, Chef Theo Setyo.
Widely recognised for his mission to elevate Indonesian ingredients and regional dishes onto the International culinary stage, Chef Theo Setyo will travel to Bali for an exclusive two-day guest chef appearance at Padma Resort Legian. Known for his bold flavours and deep appreciation for Indonesian culinary heritage, Chef Theo’s cooking blends authentic traditions with a refined modern touch. During his visit, he will collaborate with the resort’s talented in-house culinary team to present two distinctive dining experiences inspired by the richness of Indonesian cuisine.

A Four-Hands Chef Collaboration Dinner

Paying tribute to Indonesia’s deep culinary roots, The Nusantara Table presents an elevated dining experience inspired by preserving the essence of traditional recipes. Held at DONBIU Restaurant on Friday, 26 June 2026, the one-night-only buffet dinner will feature a four-hands collaboration between Chef Theo Setyo and Padma Resort Legian’s in-house Chef de Cuisine, Chef Arif Surya Priyanto.
Chef Arif will showcase an exquisite selection of elevated Indonesian dishes, including Sapi Wagyu Maranggi, Royal Mangut Salmon, and Otak-Otak Bandeng. Meanwhile, Chef Theo Setyo will present some of his renowned specialties, including Gulai Kambing, a family favourite among his cooking, alongside Bebek Bacem and Ikan Kuah Arsik.
To complete the culinary journey, guests may indulge in traditional Indonesian desserts including Klepon, alongside a curated selection of Balinese and Indonesian-inspired cocktails available at a special price of IDR 138,000+/glass.

Six Hands, One Flame – Tajima Experience

Continuing the celebration on Saturday, 27 June 2026, SKAI Bar & Grill will host Woodfire Mediterranean Meets the Archipelago, an elevated six-hands dining collaboration featuring Chef Samuel, Chef Theo Setyo, and Chef Manu Gultom.
Set against the beachfront atmosphere and skyline views of SKAI Bar & Grill, the experience combines woodfire Mediterranean cooking with bold flavours inspired by the Indonesian archipelago. Designed around sharing-style dining and open-fire cooking, the free-flow dinner menu explores fresh seafood, and rich Indonesian flavours inspired by Chef Theo’s signature cooking style, rooted in traditional pawon techniques. One of the highlights includes his creation of Remis Plecing, which blends bulung (fresh seaweed) with scallops.
Complementing the experience, guests will be welcomed with a signature drink and pass-around canapés while mingling with Chef Theo, Chef Samuel, and Chef Manu from 5PM to 6PM, before continuing to the dinner experience itself.
Chef Samuel and Chef Manu will bring Mediterranean influences and premium Tajima beef selections prepared over woodfire. More than simply premium-quality meat, Tajima represents discipline, precision, consistency, and respect for ingredients. Chef Manu Gultom, who previously collaborated with SKAI Bar & Grill last year, returns with his expertise of open fire cooking and familiarity with the beachfront dining concept.
“I’m very excited because collaborations like this are where creativity grows the most. Chef Theo and Chef Samuel each have very strong culinary identities and experiences, so bringing our different perspectives together creates something truly dynamic,” shared Chef Manu Gultom.
Chef Samuel shared the same excitement. As the culinary figure leading the kitchen at SKAI Bar & Grill, he feels honoured to present the venue’s first-ever six-hands dinner, especially alongside nationally recognised culinary figures and with the support of Tajima and Chef Manu Gultom. He believes guests are in for a truly one-of-a-kind evening.
