Roosterfish Beach Club at Pandawa Beach launches ocean-inspired dining with a new concept featuring 80% seafood-based dishes, curated by Head Chef Setiawan Margie. All dishes are locally and sustainably sourced.

The new menu boasts 80% of seafood-based dishes to sample, share, or have all to yourself. Guests can enjoy fresh prawns with rosella salt crumbles, pan-seared barramundi, or charcoal-grilled octopus. For a sumptuous seafood experience, the signature “Roosterfish Seafood Platter” is a perfect choice, featuring generously served fresh oysters, perfectly grilled fish, tiger prawns, and octopus. Otherwise, try the “Catch of the Day” where the chefs take advantage of the freshly caught seafood by the local Pandawa fishermen. While most dishes are seafood, there are options for non-seafood items and vegetarian dishes to cater to guests’ food preferences.
Maintaining fresh ingredients is essential to Roosterfish Head Chef Setiawan Margie. “We want to be able to offer our guests exceptional dining experience. Therefore having fresh ingredients every day is key,” he said. “While our local fishermen provide us with their catch of the day, we also work with local suppliers to get fresh quality seafood daily.”
To elevate the ocean-inspired dining experience, an innovative new cocktail menu has been designed by Head Mixologist, Yoga Tomy, who has created elixirs to complement the seafood cuisine, such as the Ocean-inspired Mojitos, Rooster Colada, and Watermelon Cosmo.

New Head Chef Setiawan Margie
Hailing from the city of Pontianak in West Kalimantan, Indonesia, Setiawan Margie fell in love with cooking during his journey to Australia in 2012. There, he decided to pursue formal education in commercial cooking from TAFE NSW. After graduating and then spending 5 years in some of Australia’s top kitchens, in 2019, he took his chef’s knife and headed to Bali. In Bali, Margie has experienced working for popular dining establishments such as The Junction House and Batik Restaurant before joining Roosterfish Beach Club as the Head Chef.
Margie believes that food should bring joy and happiness to those who eat it. Therefore he uses his creative approach and inspiration from what is around to prepare dishes that bring pleasure to the eyes, palates, and hearts of the diners. Today, Margie delights Roosterfish guests with an ocean-inspired menu with a fun twist that the beach club is renowned for.
